Sona’s wine list is meant to be a reflection of the
restaurant’s identity as our Wine Directors thoughtfully
choose each bottle, to inspire a dialogue. It is this selection
and interplay between food and wine that becomes an integral
part of a unique dining experience for each guest.
The highly personal and expressive nature of Chef David Myers’ contemporary
cuisine makes wine pairing a challenging and compelling journey
of discovery. With over 2,200 selections to choose from, Sona’s
wine list offers bottlings from many of the major wine producing
regions of the world including the United States, Italy, Spain,
Austria, Germany, Australia and New Zealand. The list pays
particular attention to the wines of France, especially Bordeaux.
We also provide a range of reasonably priced wines because
it is important to us to be sensitive to guests’ value-oriented
goals.
Guests may choose from over fifty wines by the glass,
as well as innovative and diverse wine pairings that change regularly
to accommodate the chefs’ seasonal menus. The intent of Sona’s
wine pairing is to balance texture, acidity and intensity with the
finesse of mirroring the flavors of the wine and food. Where cuisine
inspires the wine, wine can also inspire the cuisine. The spontaneous
nature of the chefs’ tasting menus can be catered to the attributes
of specific wines a guest may choose. Tasting portions of wines are
kept in mind in order for guests to truly enjoy a wide spectrum and
most enhance their dining experience.
We house over 21,000 bottles in temperature and humidity controlled
cellars. We use varietally-appropriate Riedel stemware in order to
showcase each wine’s personalities. Sona uses a high temperature
dish machine that does not require harsh cleaning chemicals so that
chemical or odor residues do not remain inside stemware. We employ
proper service techniques by decanting and cradling when appropriate.
Open bottles intended for future pours are preserved using 100% Argon
gas.
